A rich and filling vegetarian goulash with butter beans. Perfect veggie comfort food.





Ingredients
Vegetarian, Gluten free

  • 1 Bay leaf, dried
  • 1 400g can Butter beans
  • 2 Carrots, large
  • 1 stalk Celery
  • 1 small handfulFlatleaf parsley + more
  • 5 cloves Garlic
  • 1 Green bell pepper
  • 2 Onions, medium
  • 2 Red bell peppers
  • 3 sprigs Thyme, fresh
  • 1 400g can Tomatoes
  • 500 g Waxy potatoes, small
Canned Goods
  • 1 heaped tbspTomato puree
  • 450 ml Vegetable stock
Baking & Spices
  • 1/4 tsp Black pepper, cracked
  • 4 heaped tbspPaprika
  • 1/2 tsp Sea salt
Oils & Vinegars
  • 1 1/2 tbsp Olive oil
Dairy
  • 1 Scant 1/2 tbsp of butter
